So do any of you struggle to get your kids to eat veggies like I do? My kids eat some, but certainly not enough, so I went looking for a solution and look what I found!
It is so great, and my kids absolutely love it! I just add one scoop to their rice milk (we are trying to be cows milk free) every morning and at dinner. It is full of goodness and my kids think they are getting chocolate milk, I mean does it get any better than that? You can get it lots of places, but this is where I got it, they even have it for adults!

Steel Cut Oatmeal
So lately I have been making a small change to our breakfast staple:
Apple Juice Oatmeal
-Steel cut oats
-Sub apple juice where you use water (I use raw apple juice)
-dash of vanilla
Cook on stovetop as directed with the apple juice instead of the water and add the vanilla when you add the oats! I also add blueberries or applesauce to add a little more punch.
Oh, and here are some recent pics of the boys!

Pesto Pork Tenderloin
Here is another recipe that I made last night that turned out soooo good!
Pesto Pork Tenderloin
1-2 cups homemade pesto (recipe below)
1 pork tenderloin (1 to 1.5 lbs)
olive oil
sea salt
fresh thyme
pepper
Preheat oven to 525 degrees and then prepare tenderloin by rubbing it with olive oil, sea salt, pepper and fresh thyme if you have some. Then cut tenderloin down the middle (almost all the way through) and stuff with half the pesto (reserve the other half). Close up the pork and close with kitchen twine or toothpicks. Place on rack in pan (i used my broiler pan) and place in hot oven. Cook the loin for 5 1/2 minuted for each pound then turn off oven and let it sit in the hot oven for about an hour (do not open the oven and let the heat out)! Remove, cover with foil and let sit for 10 min before slicing. While the pork is cooking place the other half of pesto on low heat and thin into a sauce, you can use milk or olive oil to thin, that you can pour over pork when finished
I served mine over brown rice with fresh green beans!

1/2 cup pine nuts
1/2 cup Parmesan
2 cloves of garlic chopped
olive oil
Place basil in food processor and chop finely add garlic, pine nuts and Parmesan, then thin with olive oil until desired consistency

BC I suck at posting, here is a fun recipe that I make for the boys:

1/4 cup packed brown sugar
2 t baking powder
1/2t cinnamon
1/2t salt
1/2 cup real applesauce
1t vanilla
3 egg whites
1 cup milk (skim or whole)
Mix it all together, add raisins or blueberries then bake at 350 for 20-30 min. Serve warm with milk poured on top!!!!
We all love this recipe and eat it on Saturday mornings frequently!

Oh they are so big...
So because I have failed at my commitment lately, I thought I would put up a few recent pics of the boys! These are all from our time at the farm during spring break. We had a blast and the whole time Corban was on some sort of speed (created by all the tractors he wanted to ride). He was nonstop, even trying to get up at 4am to ride the tractor. I love imagining what the boys will be doing in a few years, but also just embracing what they are doing right now.
