So do any of you struggle to get your kids to eat veggies like I do? My kids eat some, but certainly not enough, so I went looking for a solution and look what I found!

It is so great, and my kids absolutely love it! I just add one scoop to their rice milk (we are trying to be cows milk free) every morning and at dinner. It is full of goodness and my kids think they are getting chocolate milk, I mean does it get any better than that? You can get it lots of places, but this is where I got it, they even have it for adults!

Steel Cut Oatmeal

So lately I have been making a small change to our breakfast staple:

Apple Juice Oatmeal
-Steel cut oats
-Sub apple juice where you use water (I use raw apple juice)
-dash of vanilla

Cook on stovetop as directed with the apple juice instead of the water and add the vanilla when you add the oats! I also add blueberries or applesauce to add a little more punch.

Pesto Pork Tenderloin

Here is another recipe that I made last night that turned out soooo good!

Pesto Pork Tenderloin
1-2 cups homemade pesto (recipe below)
1 pork tenderloin (1 to 1.5 lbs)
olive oil
sea salt
fresh thyme
pepper

Preheat oven to 525 degrees and then prepare tenderloin by rubbing it with olive oil, sea salt, pepper and fresh thyme if you have some. Then cut tenderloin down the middle (almost all the way through) and stuff with half the pesto (reserve the other half). Close up the pork and close with kitchen twine or toothpicks. Place on rack in pan (i used my broiler pan) and place in hot oven. Cook the loin for 5 1/2 minuted for each pound then turn off oven and let it sit in the hot oven for about an hour (do not open the oven and let the heat out)! Remove, cover with foil and let sit for 10 min before slicing. While the pork is cooking place the other half of pesto on low heat and thin into a sauce, you can use milk or olive oil to thin, that you can pour over pork when finished

I served mine over brown rice with fresh green beans!

Pesto
2 cups chopped fresh basil
1/2 cup pine nuts
1/2 cup Parmesan
2 cloves of garlic chopped
olive oil

Place basil in food processor and chop finely add garlic, pine nuts and Parmesan, then thin with olive oil until desired consistency

Baked Oatmeal:
3 cups rolled oats
1/4 cup packed brown sugar
2 t baking powder
1/2t cinnamon
1/2t salt
1/2 cup real applesauce
1t vanilla
3 egg whites
1 cup milk (skim or whole)

Mix it all together, add raisins or blueberries then bake at 350 for 20-30 min. Serve warm with milk poured on top!!!!

We all love this recipe and eat it on Saturday mornings frequently!

So because I have failed at my commitment lately, I thought I would put up a few recent pics of the boys! These are all from our time at the farm during spring break. We had a blast and the whole time Corban was on some sort of speed (created by all the tractors he wanted to ride). He was nonstop, even trying to get up at 4am to ride the tractor. I love imagining what the boys will be doing in a few years, but also just embracing what they are doing right now.

I know that I have read this in Genesis many times before, "God said let there be light..", yet over the last week it has truly spoken to my heart! The power He had to speak creation into being. He created something from nothing! When you really think about that it is so powerful. He (The Trinity) was absolutely complete and prefect without creation, yet he created to bring glory to Him. Having really studied this last week has really impacted my heart. it really changes the power of the Word, especially the RED letters. Can you imaging hearing the voice of the ONE who spoke creation into being, the one who created something from nothing, WOW!

Wow, this has been one of those weeks of enlightenment. I have just been so encouraged by the places that the Lord is taking me in His word and all of the things that he seeks to teach me. Having said that I also know that he seeks to purify me through all this enlightenment, and that is very scary. For those of you that know me well at all, you know that I like to have control, that is my safe place. Yet, I am constantly miserable trying to control, but I just can't seem to let it go. But lately He has been appealing to my heart and calling me out of this sinful place that I choose to live my life. He seeks for me to honor Him and my husband by submitting to their authority and find peace in that place. So as I daily meditate on Proveberbs 31:10-31 and look at what it means to be a Godly wife I struggle. I struggle to drop my old heavy ways and put on the lighter loads that I was created for, not easier, just lighter. I know that his design for my life is so much greater than mine and I honestly pray that I will see the fruits of that soon. Anyways, I hope this makes sense to all you blog stalkers, its just the weight of my heart today.

This week as been one of those weeks. Just when you think things are calming down after Christmas and Corban's birthday, I get hit with a week that is so hard. Corban is at a stage where he want me to engage him, no self play. I love to play with him, but I also have a five month old to manage and laundry, dinner and life. If anyone has suggestions on helping me foster self play I would greatly appreciate it. Anyways, Corban is so busy talking to me all day long and Cohen is almost sitting up. We are going to have a cars movie night with Corban tonight, and I am really looking forward to it.

Day at the zoo!

I must apologize for being such a bad blogger these past few months, I have no excuse! So I figured I would just update everyone on what the Causey Family has been up to. Well I am 31/32 weeks prego and starting to swell, yeah! Besides fat feet everything is going great and we are just trying to get our lives ready for our newest addition. Corban is doing great! He had tubes put in at the beginning of May, and has not had an ear infection since. This is huge for us, so we are very thankful for our doctors for making Corban feel much better. He also had a swallow study done a few weeks ago and we found out that he has a low tone swallow issue that causes him to pocket food down in his throat. Not such a good thing, but we have started a stem treatment that should help increase tone and solve the problem. Once we overcome this, we will start therapy to deal with the food aversions that were created by this low tone problem. All this to say that we are making strides every week and hope to be eating meat & fruit by Christmas! I have to say that would be the best Christmas gift I could get this year. Joshua is doing good, just busy with work. They have moved to a new building that they built, and he is very proud of it. He is great with Corban, they slide and play ball every day. So overall we are all doing great and are just trying to absorb the last bit of time that we have together as a family of three.

We has such a great Easter weekend! This is one of the most significant holidays of the year, along with Christmas, so getting to share that with Corban and Joshua is so great. It seems that I so often forget about what an amazing gift GRACE is and on Easter weekend I am continually reminded. I hate that it takes His death and resurrection to remind me of what an amazing gift he gave me, but again I am renewed in it. I have uploaded our pics from the Castle Hills Easter egg hunt to a web gallery, Corban had so much fun!

The Ranch

Last weekend we had a family getaway at Causey Ranch! Its not uncommon for us to go out there, however we usually take guests or have family with us, so for us to go alone was a gig deal. Corban had so much fun driving the gator and going to see the cows and donkeys, although he was a little scared at first. We blew lots of bubbles all weekend, and now all Corban says is "bubbles". I am glad we got a chance to getaway and do nothing for a few days!

We went and took Corbans one year pics last week, and we had so much fun! The photographer, Amy, met us in downtown Fort Worth and we took pictures at this old historic church that had been discovered in a warehouse. On Sunday Josh, Coban, Aunt Lindsey and I went on a walk with our new Red Wagon! Corban loved it and thinks that it is just the next best thing to pancakes (he loves pancakes). He even wore his Aggie hat (that Joshua hates) that Aunt Lauren got him, he looked so cute. We hope it warms up again soon, so we can go on another ride.

Wow, just saying family of four freaks me out! Oh yeah, and for those of you who don't know, we are expecting in September. I am totally freaked out, but the Lord is daily reminding me of his plan and grace in my life. Today when I went into the midwife and heard the heartbeat, I fell in love. Yes I am overwhelmed and my control issues are constantly saying "NO", but I know that the Lord is constantly reminding me of HIS power in my life and to cling to HIS promises. So get excited in the fall we will have a family of FOUR.

Well, we finally did it, we cut Corbans hair and his beautiful curls. I know that they will grow back, but it was bitter sweet. I think he looks so handsome and Daddy really likes his cut. His Aunt Barbara did it over at Grandmas on Saturday and he did so great.

We went to Tricia & Gary's house for the Super Bowl and even though the Cowboys were not contenders, Josh & Gary insisted everyone still support the home team. PT Evaluation

So anyone that knows Corban, knows that he is a tiny little thing! Which is not that big of a deal, except that he does not eat anything with texture well. This has been a concern of mine for quite some time, and after speaking with the doctor it was recommended that we go see a PT. So this past week we finally went to see her, and got the confirmation that I am not a crazy over concerned mother, there really is a problem. It was such a relief to hear, and to know that with therapy we can correct it. So we are going to see a PT once a week for the next few moths to work with Corban on all of his sensory issues. I am really looking forward to seeing the progress and having him eat one day like a big boy. I thank everyone who has been praying for us and ask you to continue praying for progress.

It's My Birthday!!!!

I had so much fun on my first birthday! Everyone came to see me and I got to eat all day long. We went to play at "Going Bonkers" and I had a blast. I got way to many toys and Mom is not sure what to do with them all. I love all of my new toys and I love to get them all out and make a huge mess. I am looking forward to my next year and learning to walk soon.

This has to be one of the most thankful seasons of my life!!!! I have so very much to be thankful for and I am astounded at the bounty of blessings in my life. I know that my life has always been blessed and full, however I think that I am so much more aware at this stage of my life. Having said this however, I know that there are many days when I am blinded by my selfishness and am completely void of thankfulness. So my prayer today and through this holiday season is that I remain thankful! That I dwell in the blessings that have been poured into my life and remain thankful for all that I have.

I wanted to post some pictures I took of Corban's play group. He absolutely loves to play with his friends, and they seem to all eat there way through the hour. It has been so meat to watch them grow and develop individually. When we first started the group Corban could not even sit up and now he crawls everywhere. Brynne & William are going to walk any day now and are trying to teach Corban how to master the skill. We have a new buddy Kai, and he is younger than them, so they have lots to teach him. I am looking forward to the many more milestones that we get to share together!

We had so much fun at Williams birthday party! I loved playing with all of the other kids and the ball pit that Miss Charity made was awesome. Halloween last night was so much fun! Corban was a rooster and I have to say that it was the cutest costume ever. People thought I was crazy when I told them what he was going to be, but now you will all understand. Everyone tells you how much things change when you have children, and all the new joys that will come with the holidays, but I could never have imagined. We went to the Pumpkin Patch on Saturday and here are some of our fun pictures. We had so much fun and Corban loved all of the giant orange things (pumpkins). It was so neat to watch him look around in such amazement, it makes you appreciate the small things so much more. Begining To Blog

So I am officially starting to blog!!! I feel like I have needed to do this for a while know and I finally have taken the time to start. It's crazy for me to think that Corban is 10 months old and is going to be on in January. It all goes by so fast (too fast) and I want to slow it down. Knowing that I can't I thought it would be a good idea to document it in a way that I could share with our friends and family, therefore I created a blog. I want to share the craziness of the causey household with you all, and I hope you all can get a better glimpse of our life. We love you all and I promise to post regularly!
